Ingredients

  • 1 fresh pineapple
  • 1/2 cup fresh lime juice
  • 3/4 cup oil
  • 2 teaspoons grated lime peel
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • 2 tablespoons chopped parsley
  • 2 oranges
  • 1 pound fresh seedless grapes
  • 1 cantaloupe

Instructions

  1. Peel, core, and dice the pineapple.
  2. Blend together the lime juice, oil, lime peel, salt, and cracked pepper to make the dressing.
  3. Mix the diced pineapple into the dressing.
  4. Cut the oranges into sections.
  5. Halve the grapes.
  6. Use a melon baller to scoop out the cantaloupe.
  7. Mix the remaining fruit into the pineapple mixture.
  8. Marinate the fruit salad for 30 minutes.
  9. Place romaine lettuce leaves on plates and divide the salad over the lettuce.
