Ingredients

  • 2 1/2 lb beef stew meat
  • 2 Tbsp vegetable oil
  • 2 stalks celery
  • 2 medium onions
  • 2 cloves garlic
  • 2 1/2 cups beer
  • 4 slices pumpernickel bread
  • 3 large carrots

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a Dutch oven, brown the beef stew meat in 1 tablespoon of vegetable oil, then remove and set aside.
  3. In the same Dutch oven, sauté the celery, sliced onions, and minced garlic in the remaining 1 tablespoon of vegetable oil.
  4. Add the browned beef, beer, crumbled pumpernickel bread, and carrots to the Dutch oven.
  5. Cover and bake in the preheated oven for 1.5 hours or until the meat is tender.
  6. Season with salt and pepper before serving.
