Ingredients

  • 1 to 2 lb. lean stew meat
  • 4 Tbsp. shortening
  • 2 Tbsp. flour
  • 1/2 cup minced onion
  • 1/2 cup chopped tomato or 1 (16 oz.) can whole, peeled tomatoes, chopped
  • 1 tsp. minced garlic
  • 1 Tbsp. minced green pepper
  • 1 Tbsp. minced parsley or dried parsley
  • salt and pepper to taste

Instructions

  1. Partially freeze the meat, then slice it thinly.
  2. Fry the sliced meat in a Dutch oven or large pot with the shortening until browned.
  3. Remove the meat from the Dutch oven and set aside.
  4. Saute the minced onion until tender.
  5. Brown the flour in the same pot until golden.
  6. Add the chopped tomatoes, minced garlic, minced green pepper, minced parsley or dried parsley, salt, and pepper.
  7. Return the browned meat to the pot and add 2 cups of water.
  8. Cover and cook over low heat for about 1 hour and 30 minutes or until the meat is tender.
  9. Serve hot with cooked rice.
