Beef Flautas Recipe

Instructions
- In a Dutch oven, place brisket, onion, spices, & sufficient water to cover.
- Simmer, covered, about 2-1/2 hrs or possibly till meat is very tender.
- Finely shred beef & chop the onion; mix together with green pepper.
- Place a spoonful of meat mix on each tortilla..
- Roll up & secure with toothpicks.
- Deep fry flautas in warm oil.
- Drain on paper towels.
- If you like, serve with guacamole, salsa, & lowfat sour cream.
- YIELD: 9-12 servings
- (While living in San Diego many years ago, a Mexican couple showed, & helped me make these for a large neighborhood fiesta.
- They were a big hit & I have continued to make them just the way they showed me.
- They can be served as appetizers or possibly as a main meal, alongside Spanish rice & refried beans)
