Beef Rib Roast

Ingredients

  • 1 None beef rib roast (5 1/2 lbs)
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary leaves
  • 2 tbsp fresh thyme leaves

Instructions

  1. Preheat the oven to 350°F.
  2. Rub beef with oil. Sprinkle with herbs and season to taste. Place on a rack in a roasting pan.
  3. Roast for 2 hours 20 mins for medium, or until cooked to desired doneness. Loosely cover with foil. Rest for 15-20 mins before carving.
