Ingredients

  • 1 lb. ground beef
  • 1 Tbsp. flour
  • 2 tsp. salt
  • 1/2 medium green pepper, chopped
  • 2 tsp. snipped parsley
  • 1/4 tsp. pepper
  • 1 1/2 c. water
  • 1 (8 oz.) can whole tomatoes
  • 1 1/2 c. uncooked instant rice

Instructions

  1. Cook and stir ground beef in a 10-inch skillet until light brown; drain.
  2. Sprinkle beef with flour and salt.
  3. Stir in green pepper, onion, and parsley; cook and stir over low heat until onion is tender, about 5 minutes.
  4. Stir water and tomatoes (with liquid) into beef mixture.
  5. Break up tomatoes with a fork.
  6. Heat to boiling. Reduce heat; cover and let stand 5 minutes.
  7. Stir in uncooked instant rice and let it absorb the liquid before serving.
