Beef Wraps

Ingredients

  • 1 tbsp vegetable oil
  • 1 lb beef braising meat, trimmed, thinly sliced
  • 1 oz taco seasoning mix
  • 1 (13.5 oz) tomato puree
  • 1 None green pepper, seeded, thinly sliced
  • 1 None red onion, thinly sliced
  • 10 None small tortillas, warmed
  • 2 None cucumbers, peeled into ribbons
  • None None sour cream and fresh cilantro, to serve

Instructions

  1. In a large saucepan, heat oil over high heat. Brown beef for 3-4 mins, stirring. Add taco seasoning mix and cook for 1 min, stirring. Add tomato puree and 1 cup water. Reduce heat to medium and simmer, partially covered, for 20 mins. Add pepper and onion. Reduce heat to low and simmer gently, covered, for 4-5 mins, until beef and vegetables are tender.
  2. Top warmed tortillas with cucumbers, beef, sour cream and cilantro. Wrap to serve.
