Beer Braised Beef

Ingredients

  • 2 tbsp olive oil
  • 1.5 kg boneless beef shoulder, cut into cubes
  • 100 g bacon lardons
  • 2 None onions, peeled and finely chopped
  • 2 tbsp mustard powder
  • 1 tbsp flour
  • 650 ml dark beer
  • 3 tbsp white wine vinegar
  • 450 ml beef stock
  • 4 sprigs thyme, leaves picked
  • 2 None bay leaves, plus extra to garnish (optional)

Instructions

  1. Heat the oil in a saucepan, add the beef and saute for 5-8 mins until browned. Add the bacon and onions and cook for 3-4 mins. Stir in the dry mustard and flour and cook for 1 min. Then add the beer, vinegar and stock.
  2. Add the thyme and bay leaves. Season with salt and freshly ground black pepper. Simmer, covered, for 1 1/2 hours, stirring occasionally. Garnish with the parsley and the extra bay leaves (if using).
