Beets With Chive Cream

Instructions
- Boil beets in salted water until tender (about 35 minutes). Drain, and cool in refrigerator until ready to prepare dish.
- While beets cool, mix yogurt/cream with chopped chives and set aside.
- Rub skins off beets. Cut beets in chunks or slices. Toss beets with olive oil, salt and pepper. Top with a dollop of the cream mixture.
- Serve immediately.
