Instructions

  1. Preheat oven to 400°F.
  2. Rinse eggplants and dry them.
  3. Slice eggplants in half lengthwise.
  4. Place eggplant halves on foil-covered oven rack.
  5. Roast for 40 to 50 minutes until the skin appears charred.
  6. Remove from oven and let cool.
  7. Scoop out the flesh from the charred shell.
