Ingredients

  • 1 can cream corn
  • 3/4 cup milk
  • 1/3 cup melted Crisco
  • 2 eggs
  • 1 cup cornmeal
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 (4 oz.) can chopped green chilies
  • 2 cups grated cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix cream corn, milk, melted Crisco, eggs, cornmeal, baking soda, and salt well in a bowl.
  3. Pour half of the batter into a greased 9x9-inch baking pan.
  4. Spread chopped green chilies over the batter.
  5. Sprinkle 1 cup of grated cheese over the chilies.
  6. Pour the remaining batter on top of the cheese layer.
  7. Sprinkle the remaining 1 cup of grated cheese over the top.
  8. Bake for 40 minutes or until golden brown and set.
