Ben'S Giardiniera
A vibrant and tangy giardiniera featuring crunchy vegetables, garlic, herbs, and vinegar, perfect as a condiment or snack for those who enjoy bold, savory flavors.

- Dice the celery, carrots, and peppers. Put in a steel bowl and mix.
- Cover with a thin layer of salt. When the salt is melted, rinse the vegetables with white vinegar.
- After rinsing, place the vegetables in a bowl and cover with red vinegar.
- Optionally, dilute the vinegar slightly if desired.
- Let sit for 15 minutes, then drain the mixture thoroughly.
- Chop the garlic and parsley.
- Add the garlic and parsley to the vegetables. Add oregano and mix well.
- Fill jars with the mixture, leaving 1/2 inch from the top.
- Add vegetable oil and top with olive oil.
- Secure the caps, turn the jars upside down, and store in a cool, dark place.
- The giardiniera can be served after 3 weeks.
