Ingredients

  • 1 celery stalk
  • 1 bag carrots
  • 1 lb. various peppers
  • 5 cloves garlic
  • parsley
  • salt
  • white vinegar
  • red vinegar
  • oregano

Instructions

  1. Dice the celery, carrots, and peppers. Put in a steel bowl and mix.
  2. Cover with a thin layer of salt. When the salt is melted, rinse the vegetables with white vinegar.
  3. After rinsing, place the vegetables in a bowl and cover with red vinegar.
  4. Optionally, dilute the vinegar slightly if desired.
  5. Let sit for 15 minutes, then drain the mixture thoroughly.
  6. Chop the garlic and parsley.
  7. Add the garlic and parsley to the vegetables. Add oregano and mix well.
  8. Fill jars with the mixture, leaving 1/2 inch from the top.
  9. Add vegetable oil and top with olive oil.
  10. Secure the caps, turn the jars upside down, and store in a cool, dark place.
  11. The giardiniera can be served after 3 weeks.
