Ingredients

  • 2 c. flour
  • 2 c. sugar
  • 3 eggs
  • 1 c. oil
  • 1/2 c. water
  • 2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 2 c. shredded carrots
  • 1 small can crushed pineapple, drained
  • 2 tsp. vanilla
  • 1 c. chopped walnuts
  • 1 c. flaked coconut

Instructions

  1. Combine all ingredients and mix with spoon.
  2. Pour into a greased and floured 9 x 12-inch pan.
  3. Bake at 350° for 45 to 50 minutes.
