Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon salt
  • 3 large bananas
  • 1 teaspoon soda
  • 1 tablespoon sour milk
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. To make sour milk, mix about 1/2 teaspoon white vinegar with 1 tablespoon of milk and let stand until curdled.
  2. Cream butter and sugar until light and fluffy.
  3. Add beaten eggs and salt to the creamed mixture and mix well.
  4. Alternately add flour and mashed bananas to the batter, beginning and ending with flour.
  5. Dissolve soda in a little tepid water and add to the sour milk mixture.
  6. Mix the soda and sour milk into the batter until just combined.
  7. Stir in vanilla extract and chopped nuts.
  8. Pour the batter into a greased loaf pan.
  9. Bake very slowly at 250°F (120°C) for 1 hour and 25 minutes.
  10. Brown the top for an additional 10 minutes if needed.
  11. Test with a toothpick to check for doneness, then let stand overnight before removing from the pan and cooling.
