Ingredients

  • 1 Tbsp. shortening
  • 8 Tbsp. flour
  • 2/3 c. sugar
  • 1/4 tsp. salt
  • 2 egg yolks, beaten
  • 1 tsp. vanilla
  • 2 c. milk
  • baked pie shell
  • 2 Tbsp. confectioners sugar
  • 2 egg whites

Instructions

  1. Melt the shortening.
  2. Add flour, sugar, salt, milk, and beaten egg yolks. Cook over hot water until thick, stirring constantly.
  3. Remove from heat and add vanilla.
  4. Pour the filling into the baked pie shell.
  5. Make the meringue by beating the egg whites until stiff, then gradually beat in confectioners' sugar.
  6. Spread the meringue over the pie filling.
  7. Bake in a moderate oven at 375°F for 15 minutes or until the meringue is delicately browned.
