Volcano Potatoes are baked potato shells filled with cheesy, creamy mashed potato mixture, topped with paprika for a savory, comforting dish perfect for family dinners or gatherings.

Ingredients

  • 4 baking potatoes
  • 3 slices Cheddar cheese or grated American cheese
  • 3 Tbsp. butter or margarine
  • 1/3 cup milk
  • salt
  • pepper
  • paprika

Instructions

  1. Rub the potatoes with cooking oil and bake in a 350°F oven until done, about 1 hour.
  2. Cut the tops off each baked potato and scoop out the contents into a mixing bowl, saving the skins.
  3. Add cheese, butter, milk, salt, and pepper to the potato mixture.
  4. Mix with an electric mixer until well blended.
  5. Pile the potato mixture back into the potato skins and sprinkle with paprika.
  6. Return the stuffed potatoes to the oven and bake until browned.
