Ingredients

  • 4 cups chopped apples (do not peel)
  • 2 cups sugar
  • 1/2 cup oil
  • 2 teaspoons vanilla
  • 1 cup chopped nuts
  • 1 teaspoon salt
  • 2 teaspoons soda
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 beaten eggs

Instructions

  1. Combine chopped apples and sugar in a mixing bowl.
  2. Mix until well coated and set aside.
  3. Add oil, vanilla, chopped nuts, salt, soda, flour, cinnamon, and beaten eggs to the apple mixture.
  4. Mix all ingredients thoroughly until smooth.
  5. Pour batter into a greased baking pan.
  6. Bake at 350°F (175°C) for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
