Ingredients

  • 6 medium potatoes
  • 1 can cream of chicken soup
  • 1 cube butter or margarine
  • diced onions
  • 1 pint sour cream (16 oz.)
  • yellow cheese

Instructions

  1. Boil potatoes with skins on until tender.
  2. Peel and shred the cooked potatoes.
  3. In a large bowl, combine the cream of chicken soup, cubed butter, diced onions, and sour cream.
  4. Fold in the shredded potatoes and mix well.
  5. Layer the mixture in a Pam‑sprayed baking dish, sprinkling yellow cheese between layers or mixing it throughout as preferred.
  6. Top with a final layer of shredded cheese.
  7. Bake at 350°F for 45 minutes, or until the cheese is bubbly and golden.
  8. Cool for 10 minutes before serving.
