Ingredients

  • 4 duck carcasses
  • 1 cup bacon fat
  • 1 bunch green onions, chopped
  • 2 stalks celery, chopped
  • 2 bell peppers, chopped
  • 1 can chicken broth
  • 1 cup cooking sherry
  • 1 can mushrooms

Instructions

  1. Season the ducks inside and out with Creole seasoning.
  2. Fill each duck cavity with a mixture of chopped green onions, celery, and bell peppers.
  3. Brown the ducks in bacon fat, then pour in chicken broth and cooking sherry.
  4. Cover and simmer until the ducks are tender.
  5. Debone the ducks and add the canned mushrooms to the sauce to finish.
  6. Serve the creamy duck and mushroom mixture over rice.
