Ingredients

  • 1 box yellow pudding cake mix
  • 20 oz can crushed pineapple
  • 1 cup sugar
  • 1 package instant butter pecan pudding
  • 1 large container Cool Whip
  • nuts

Instructions

  1. Bake a yellow pudding cake in a 13x9 inch pan according to package instructions.
  2. Five minutes before the cake is done, beat the entire can of crushed pineapple (with juice) and 1 cup of sugar together.
  3. Boil the pineapple mixture for 5 minutes.
  4. Remove the cake from the oven and pour the hot pineapple mixture evenly over the top.
  5. Prepare the instant butter pecan pudding according to package directions and spread it over the pineapple-topped cake.
  6. Spread a large container of Cool Whip over the pudding layer.
  7. Sprinkle generously with coconut and nuts.
  8. Chill the cake before serving.
