Instructions
- Take the chicken and cut it along both sides of the spine. Keep the spine and place on a sheet pan.
- Cut the chicken in the center of the breasts, cracking the two apart.
- Carefully remove the breast meat from the bone.
- Cut each half in half at the base of the rib cage above the thigh, looking for the joint and cutting between bones to get four quarters.
- Stand the leg up and cut along the bone to remove the meat.
