Bill'S Beef Stew
Ingredients
- 3 slices bacon, cut in pieces ⓘ
- 4 Tbsp. flour ⓘ
- pepper to taste ⓘ
- 2 lb. lean beef, cut up ⓘ
- 1 large onion, chopped
- 4 cloves garlic ⓘ
- 2 (28 oz.) cans tomato sauce ⓘ
- 2 c. beef broth ⓘ
- 1 c. red wine ⓘ
- 1/4 tsp. thyme ⓘ
- 6 carrots, cut up ⓘ
- 3 stalks celery, cut up ⓘ
- 6 large potatoes, cut up ⓘ
- 1/4 tsp. red pepper ⓘ
Instructions
- Cook bacon until brown.
- Combine meat, flour and pepper in bowl; mix well.
- Brown meat in bacon fat; stir often.
- Add oil if needed.
- Add onion and garlic.
- Add tomato sauce, broth, wine and thyme.
- Cover and cook slowly, 1 1/2 to 2 hours.
- Add carrots, celery and potatoes; cook until vegetables are done.
- Serves 3 to 4.
