Ingredients

  • 3 slices bacon, cut in pieces
  • 4 Tbsp. flour
  • pepper to taste
  • 2 lb. lean beef, cut up
  • 1 large onion, chopped
  • 4 cloves garlic
  • 2 (28 oz.) cans tomato sauce
  • 2 c. beef broth
  • 1 c. red wine
  • 1/4 tsp. thyme
  • 6 carrots, cut up
  • 3 stalks celery, cut up
  • 6 large potatoes, cut up
  • 1/4 tsp. red pepper

Instructions

  1. Cook bacon until brown.
  2. Combine meat, flour and pepper in bowl; mix well.
  3. Brown meat in bacon fat; stir often.
  4. Add oil if needed.
  5. Add onion and garlic.
  6. Add tomato sauce, broth, wine and thyme.
  7. Cover and cook slowly, 1 1/2 to 2 hours.
  8. Add carrots, celery and potatoes; cook until vegetables are done.
  9. Serves 3 to 4.
