Ingredients

  • 5 lb. potatoes
  • 1 large onion, chopped (optional)
  • 1 stick butter or oleo
  • milk for mashing

Instructions

  1. Peel, cook, and dice the potatoes.
  2. Cook chopped onion in milk, ensuring it does not boil.
  3. Melt a stick of butter into the hot onion milk mixture.
  4. Mash the cooked potatoes with the hot onion milk and butter mixture until creamy.
  5. Beat the mashed potatoes until smooth and creamy.
  6. Allow the mashed potatoes to cool, then package and store in the freezer.
  7. When ready to serve, thaw the mashed potatoes.
  8. Place in a Corning Ware dish and reheat in a steamer until hot.
  9. The mashed potatoes will taste like freshly made.
