Ingredients

  • 1 (6 to 7 lb.) cooked corned beef roast
  • 10 oz. jar red maraschino cherries (undrained)
  • 1 cup firmly packed brown sugar
  • 1/2 cup orange juice
  • 1/2 teaspoon whole cloves
  • 1 medium orange, sliced

Instructions

  1. Place the cooked corned beef roast in a lightly greased 13 x 9 x 2-inch pan and cover.
  2. Bake at 325°F (163°C) for 30 minutes.
  3. Drain the cherries, reserving the syrup, and set cherries aside.
  4. Combine cherry syrup, brown sugar, orange juice, and cloves in a saucepan; bring to a boil.
  5. Reduce heat and simmer for 5 minutes, stirring occasionally.
  6. Set the cherry glaze aside.
  7. Make shallow diamond-shaped cuts in the roast and brush with the cherry mixture.
  8. Secure orange slices and cherries on the roast with wooden picks.
  9. Brush the fruit with the cherry mixture.
  10. Cover and bake the roast for an additional 30 minutes, brushing every 10 minutes with remaining cherry mixture.
