Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 cup ketchup
  • 1/3 cup tomato juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon red pepper
  • 2 eggs
  • 3/4 cup soft breadcrumbs
  • 1/4 cup chopped onion
  • 2 teaspoons prepared mustard

Instructions

  1. In a large bowl, combine 1/2 cup ketchup, tomato juice, salt, pepper, red pepper, beaten eggs, breadcrumbs, chopped onion, and prepared mustard.
  2. Mix thoroughly until well blended.
  3. Add ground beef to the mixture and mix until evenly incorporated.
  4. Press the beef mixture into a 5 x 5-inch loaf pan.
  5. Combine 1/4 cup ketchup, 2 teaspoons mustard, and brown sugar, then spread over the top of the meatloaf.
  6. Bake at 400°F for 35 to 40 minutes or until cooked through.
  7. Garnish with fresh herbs, if desired, before serving.
