- In a large bowl, combine 1/2 cup ketchup, tomato juice, salt, pepper, red pepper, beaten eggs, breadcrumbs, chopped onion, and prepared mustard.
- Mix thoroughly until well blended.
- Add ground beef to the mixture and mix until evenly incorporated.
- Press the beef mixture into a 5 x 5-inch loaf pan.
- Combine 1/4 cup ketchup, 2 teaspoons mustard, and brown sugar, then spread over the top of the meatloaf.
- Bake at 400°F for 35 to 40 minutes or until cooked through.
- Garnish with fresh herbs, if desired, before serving.
