Ingredients

  • 2 egg yolks
  • 1/4 cup confectioners sugar
  • 2 tablespoons brandy or white vermouth
  • 1/2 teaspoon vanilla
  • 2 egg whites, whipped
  • 1 cup heavy cream, whipped
  • 1/2 cup plus 2 tablespoons crushed macaroons or coconut cookies

Instructions

  1. In a small bowl, beat the egg yolks with confectioners sugar until fluffy.
  2. Stir in vanilla and brandy or white vermouth.
  3. Gently fold the beaten egg yolks into the whipped egg whites.
  4. Then fold the egg white mixture into the whipped heavy cream.
  5. Stir in the crushed macaroons or coconut cookies.
  6. Fill 8 cupcake papers or dessert glasses with the mixture.
  7. Serve immediately or freeze until ready to serve.
