Bistro Breakfast Burger

Ingredients

  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon hot sauce
  • 1 1/2 pounds ground beef, 80/20
  • 1 teaspoon sweet paprika
  • Kosher salt and freshly ground black pepper
  • 4 slices thick-cut bacon, halved crosswise
  • 4 large eggs
  • 4 sesame seed hamburger buns
  • 4 tablespoons unsalted butter, melted, for brushing
  • 4 slices Havarti cheese

Instructions

  1. Preheat the oven to 350 degrees F. Mix the ketchup, brown sugar, Worcestershire sauce, chili powder and hot sauce in a small bowl.
  2. Set aside.
  3. Using a fork, gently mix the beef with the paprika, 1 teaspoon salt and 1/2 teaspoon black pepper.
  4. Form into four 5-inch patties.
  5. Cover and set aside.
  6. Cook the bacon in a large nonstick skillet over medium heat until the fat is rendered and the bacon is crisp, about 8 minutes.
  7. Remove and drain on a paper-towel-lined plate.
  8. Pour off most of the bacon fat, leaving about 2 teaspoons in the skillet, reserving the extra bacon fat.
  9. Heat the skillet over medium-high heat.
  10. Add the burgers to the skillet, 2 at a time, and cook until nicely browned, 4 minutes.
  11. Flip and cook the other side until the burger is done, about 4 minutes for medium-rare.
  12. Repeat with the remaining burgers.
  13. Place the burgers on a rimmed baking sheet and place in the oven to keep warm while cooking the eggs.
  14. Wipe out the skillet.
  15. Add 1 tablespoon of the reserved bacon fat to the skillet and heat over medium-high heat.
  16. Break the eggs into the skillet and cook until the whites are set, about 5 minutes.
  17. Season with salt and pepper.
  18. Meanwhile, brush the buns with melted butter.
  19. Place them on a rimmed baking sheet and bake until lightly toasted, about 10 minutes.
  20. Build the burger by placing a hamburger patty on the bottom bun, add a slice of cheese, 2 pieces of bacon and top with a fried egg.
  21. Spread the top bun with some of the spiced ketchup and place on top.
