  3. Add the black beans, crushed tomatoes, remaining 4 1/2 cups of chicken broth, and ground cumin; bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 to 25 minutes.
  5. Pour half of the soup into a food processor or blender and puree until smooth.
  6. Transfer the pureed soup back to the Dutch oven or saucepan; heat until hot and stir in chopped cilantro and salt to taste.
  7. In a small bowl, combine diced Monterey Jack cheese and chopped peppers.
