Black Beans And Sofrito

Ingredients

  • 2 cans black beans, rinsed
  • 1/3 c. oil
  • 1 large onion, chopped
  • 1 chopped bell pepper
  • 1 can drained tomatoes, chopped
  • 1 Tbsp. cumin
  • 1 tsp. minced jalapeno
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. garlic, minced

Instructions

  1. Heat oil in a large skillet.
  2. Add onion, bell pepper and garlic and cook until clear.
  3. Add rest of ingredients (except beans) and cook about 5 minutes.
  4. Mix the beans with vegetable mixture.
  5. Spoon over hot, cooked rice.
