Ingredients

  • 1/2 stick oleo
  • 1 1/2 cups cornmeal
  • 1/2 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • scant 1/2 teaspoon soda
  • 3 teaspoons baking powder
  • 1 1/4 cups buttermilk
  • 2 eggs

Instructions

  1. Preheat oven to 425°F.
  2. In a 10-inch black skillet or pan, melt the oleo.
  3. Sift together the cornmeal, flour, sugar, salt, soda, and baking powder.
  4. In a separate bowl, beat the buttermilk, eggs, and melted oleo.
  5. Add the liquid mixture to the dry ingredients and mix well.
  6. Pour the batter into the hot skillet.
  7. Bake for 25 minutes or until done.
