Blackberry Roll

Ingredients

  • 2 c. flour
  • 1/2 tsp. salt
  • 4 tsp. baking powder
  • 2 Tbsp. sugar
  • 1/2 c. shortening
  • 1 c. sugar
  • 1 c. water
  • 2 Tbsp. butter

Instructions

  1. Sift together the flour, salt, baking powder, and sugar.
  2. Work in the shortening as for biscuits until the mixture resembles coarse crumbs.
  3. Add water gradually to moisten the mixture, then knead for 1 minute.
  4. Roll out the dough to about 1/2-inch thickness on a floured surface.
  5. Spread the dough with fresh or prepared berries.
  6. Sprinkle sugar over the berries and dot with small pieces of butter.
  7. Roll up the dough tightly and place in a buttered baking dish.
  8. Combine 1 cup sugar, water, and 2 tablespoons butter in a saucepan and bring to a boil.
  9. Add vanilla extract to the hot syrup and pour it over the rolled dough.
  10. Bake at 350°F (175°C) for about 45 minutes or until done and the syrup has thickened.
  11. Serve warm with milk or ice cream.
