Ingredients

  • 1 tsp. paprika
  • 1/2 tsp. crumbled dried sage
  • 1/2 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. granulated sugar
  • 1/2 tsp. salt
  • 1/4 tsp. ground red pepper (cayenne)
  • 1/4 tsp. onion powder
  • 4 catfish fillets

Instructions

  1. Put spices in a 1-gallon food storage bag.
  2. Close bag and shake well.
  3. Put 1 fillet in the bag at a time and shake to coat.
  4. Spray a large nonstick skillet with cooking spray.
  5. Add olive oil and heat over medium heat.
  6. Add catfish fillets, skinned side up, and cook 4 to 5 minutes until lightly blackened.
  7. Turn fillets with a spatula.
  8. Cook 4 to 5 minutes longer, until fish feels firm.
  9. Serve with lemon slices.
