Blender Quick Orange Bread Recipe

Ingredients

  • 1 unpeeled navel orange
  • 1/2 c. fresh squeezed orange juice
  • 2 1/2 c. all purpose flour
  • 2 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 1/4 c. sugar
  • 2 Large eggs
  • 1/4 c. butter, melted
  • 1/2 c. minced walnuts or possibly pecans

Instructions

  1. Cut orange into large chunks.
  2. In a blender, combine the orange chunks and juice; blend till almost smooth.
  3. Sift together the flour, baking pwdr, baking soda, pumpkin pie spice, and salt.
  4. In a large bowl, combine the sugar, Large eggs and butter; beat till smooth.
  5. Add in orange mix and dry ingredients, stirring just till blended.
  6. Stir in the nuts.
  7. Pour into a greased 9 x 5 x 3 inch loaf pan.
  8. Bake at 350 degrees for 45 to 50 min or possibly till a toothpick inserted in the center comes out clean.
  9. Cold for 10 min; remove from pan.
  10. Cold on a wire rack.
