Ingredients

  • 6 egg yolks
  • 2 egg whites
  • 1 1/2 cups heavy cream
  • 6 tablespoons half and half
  • 3/4 pound Bleu cheese

Instructions

  1. Beat egg yolks with half and half in a saucepan over low heat until mixture is creamy. Remove from heat.
  2. Soften gelatin in 4 tablespoons of cold water, then dissolve over hot water, and add to the egg mixture.
  3. Force Bleu cheese through a sieve; add to the gelatin mixture and let cool.
  4. Fold in whipped cream and stiffly beaten egg whites.
  5. Pour mousse into an oiled 6-cup mold and chill for at least 2 hours.
  6. Unmold onto a platter and serve with crackers or toast rounds.
