Ingredients

  • 1 to 2 oz. blue cheese
  • 1 lb. ground beef
  • 1/4 cup herb seasoned stuffing or seasoned dry bread crumbs
  • 1/4 cup half and half or milk
  • 1/4 teaspoon salt (optional)
  • 2 teaspoons cornstarch
  • 1/2 cup fresh orange juice
  • 1 jar peach preserves (10 or 12 oz.)
  • 2 tablespoons chutney, chopped
  • 1 teaspoon fresh grated orange peel
  • 1 orange, peeled, segmented, and cut in half

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Crumble blue cheese into a mixing bowl. Add ground beef, herb seasoned stuffing, half and half (or milk), and salt, then mix well.
  3. Shape the mixture into 1-inch meatballs and arrange them in a 13 x 9 x 2-inch baking pan.
  4. Bake, uncovered, for 20 minutes.
  5. Drain the meatballs well and set aside.
  6. In a saucepan, combine orange juice, peach preserves, chopped chutney, and grated orange peel.
  7. Simmer the sauce until slightly thickened.
  8. Serve meatballs with the warm orange-peach glaze, garnished with orange segments.
