Ingredients

  • 4 eggs, separated
  • 2 c. sugar
  • 1 c. shortening
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 3 c. flour
  • 2/3 c. milk
  • 3 c. floured blueberries

Instructions

  1. Beat egg whites until stiff; add 1 cup sugar.
  2. Set aside. Cream the shortening, salt, rest of sugar, and vanilla.
  3. Add egg yolks and beat until creamy.
  4. Add baking powder, milk, and flour to the mixture alternately.
  5. Fold in egg whites, then blueberries.
  6. Pour into a well-greased and floured 9 x 13-inch pan.
  7. Sugar the top.
  8. Bake at 350° for 50 minutes.
