Ingredients

  • 1 box blueberry muffin mix
  • 1/2 stick oleo (butter)
  • 1/3 cup chopped pecans
  • 1/2 pound cream cheese
  • 1/2 cup sugar
  • 1 egg
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon peel

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9-inch square pan.
  3. Rinse blueberries from mix with cold water and drain.
  4. Cut butter into the blueberry muffin mix using a pastry blender or two knives.
  5. Stir in finely chopped pecans.
  6. Press the mixture into the bottom of the prepared pan.
  7. Bake at 350°F for 15 minutes or until set.
  8. In a large bowl, blend cream cheese and sugar until smooth.
  9. Add egg, lemon juice, and lemon peel to the mixture.
  10. Beat well until combined.
  11. Spread the cream cheese mixture over the baked crust.
  12. Sprinkle blueberries over the top.
