Ingredients

  • 2 1/2 cups fresh blueberries
  • 1 tablespoon cornstarch
  • 3 packages (8 oz.) cream cheese, softened
  • 1 cup sugar
  • 5 eggs
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups sour cream
  • 2 tablespoons sugar

Instructions

  1. Combine 2 1/2 cups blueberries and 1 tablespoon cornstarch in a blender; blend until smooth.
  2. Cook the blueberry puree over medium heat for about 15 minutes, stirring constantly until thickened.
  3. Set the blueberry sauce aside to cool and reserve 1/2 cup for the glaze.
  4. In a mixing bowl, beat the softened cream cheese until smooth.
  5. Add 1 cup sugar and continue mixing until well combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Mix in 2 tablespoons cornstarch and 1/4 teaspoon salt.
  8. Stir in 1 1/2 cups sour cream until smooth.
  9. Pour the cream cheese mixture into a prepared crust and bake at 325°F (163°C) for about 60 minutes or until set.
  10. Let the cheesecake cool completely, then spread the reserved blueberry glaze on top before serving.
