Blueberry Puddin' Pie

- Line the bottom and sides of a 9-inch pie plate with halved ladyfingers or cookies.
- Cook the vanilla pudding according to the package directions, using 3 cups of milk. Add grated orange rind while it is cooking.
- Stir in flaked coconut into the pudding.
- Chill the pudding until it is set.
- Spread half of the pudding mixture into the prepared pie crust.
- Spread half or more of the blueberries over the pudding layer.
- Cover with the remaining pudding mixture.
- Whip heavy cream with confectioners sugar and vanilla until stiff peaks form.
- Spread the whipped cream over the top of the pie.
- Sprinkle additional blueberries on top of the whipped cream.
- Chill the pie until ready to serve.
