Ingredients

  • 20 ladyfingers or small cookies
  • 2 packages vanilla pudding mix
  • 3 cups milk
  • 2 teaspoons grated orange rind
  • 1/2 cup flaked coconut
  • 2 cups fresh or frozen blueberries, rinsed and drained
  • 1 cup heavy cream
  • 1/4 cup confectioners sugar
  • 1 teaspoon vanilla

Instructions

  1. Line the bottom and sides of a 9-inch pie plate with halved ladyfingers or cookies.
  2. Cook the vanilla pudding according to the package directions, using 3 cups of milk. Add grated orange rind while it is cooking.
  3. Stir in flaked coconut into the pudding.
  4. Chill the pudding until it is set.
  5. Spread half of the pudding mixture into the prepared pie crust.
  6. Spread half or more of the blueberries over the pudding layer.
  7. Cover with the remaining pudding mixture.
  8. Whip heavy cream with confectioners sugar and vanilla until stiff peaks form.
  9. Spread the whipped cream over the top of the pie.
  10. Sprinkle additional blueberries on top of the whipped cream.
  11. Chill the pie until ready to serve.
