Ingredients

  • 2 cups blueberries
  • 1 cup crushed pineapple
  • 8 oz cream cheese
  • 3 tablespoons sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/2 cup Cool Whip

Instructions

  1. Drain the pineapple and reserve the syrup.
  2. Blend the cream cheese, sugar, milk, and vanilla until smooth.
  3. Set aside 2 tablespoons of crushed pineapple.
  4. Stir the remaining pineapple into the cream cheese mixture.
  5. Spread the cream cheese and pineapple mixture over the graham cracker crust and chill.
  6. In a saucepan, combine sugar, cornstarch, salt, and 1/3 cup of pineapple syrup.
  7. Cook the mixture over low heat until thickened.
  8. Add the blueberries and cook a little longer until berries are tender.
  9. Allow the filling to cool.
  10. Pour the cooled blueberry mixture over the chilled pie crust.
  11. Top with Cool Whip and the reserved pineapple pieces.
