Ingredients

  • 8 boar chops
  • salt
  • pepper
  • flour
  • cooking oil
  • 1 oz. cognac
  • 1 cup white wine
  • 1 tablespoon mustard
  • 1 cup sour cream

Instructions

  1. Season the boar chops with salt and pepper. Roll them in flour.
  2. Brown the chops in hot cooking oil in a skillet.
  3. Add the cognac and carefully light it with a match to flambé.
  4. Douse the flame with white wine.
  5. Add mustard, cover, and cook until the meat is tender.
  6. Stir in sour cream and cook a few minutes longer before serving.
