Ingredients

  • poke greens to fill a 4-quart pan
  • 1 teaspoon soda
  • oil or shortening
  • 2 cans spinach
  • 12 to 18 eggs
  • salt

Instructions

  1. Wash poke greens thoroughly.
  2. Place poke greens in a 4-quart pan, add water, and bring to a boil.
  3. Add 1 teaspoon of soda to the boiling greens.
  4. Drain off the soda water.
  5. Add fresh hot water to the greens.
  6. Bring back to boiling, lower the heat, and cook slowly for 20 minutes.
  7. Drain the greens and place them in a skillet with drained spinach and oil or shortening.
  8. Continue cooking and dip out excess water for a few minutes.
  9. Stir eggs in a bowl and add to the greens mixture.
  10. Cook until eggs are fully cooked.
