Ingredients

  • 2 lb. chitterlings, cleaned and cut into 2-inch lengths
  • 2 onions, minced
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 1/2 tsp. cayenne
  • 2 cloves garlic, minced
  • 2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Put all ingredients and 4 cups of water in a kettle.
  2. Bring to a boil.
  3. Reduce heat and simmer, covered, for 2 hours or until tender.
  4. Serve plain or deep-fried if desired.
