Ingredients

  • 3 lemons, sectioned
  • 2 cups rock salt
  • 1 jar prepared mustard
  • 6 ears corn
  • 20 to 30 pounds live crawfish
  • 3 onions, sectioned
  • 3 tablespoons red pepper
  • 6 potatoes
  • 2 bags dry crab boil mix

Instructions

  1. Fill a 30-quart pot one-quarter full with water and place over high heat.
  2. Add lemons, onions, rock salt, red pepper, prepared mustard, crab boil mix, corn, and potatoes to the boiling water, then boil for 20 minutes.
  3. Once the aroma is strong, add live crawfish to the pot and return to a boil for 7 minutes.
  4. Cover the pot and turn down the heat to simmer for 3 minutes.
  5. Remove the crawfish from the pot and liberally add table salt before peeling and serving.
