A flavorful homemade bologna sausage with a smoky, seasoned taste, perfect for sandwiches or charcuterie boards, suited for those who enjoy traditional cured meats.

Ingredients

  • 100 lb. hamburger
  • 4 lb. Tender Quick salt
  • 1 oz. saltpetre
  • 1 lb. sugar
  • 3 oz. pepper

Instructions

  1. Mix all ingredients well and let set for 4 days.
  2. Grind the mixture again and stuff into cloth bags.
  3. Cook slowly, just simmering for 30 minutes. Optionally, smoke or paint with liquid smoke.
  4. Alternatively, can in wide mouth cans.
  5. Add 1/2 teaspoon liquid smoke before cooking.
  6. Pressure cook for 1 1/2 hours at 10 pounds pressure.
