- Peel and grate the potatoes into a casserole dish.
- In a saucepan over low heat, melt butter and cheese together.
- Remove from heat and stir in sour cream, chopped chives, salt, and pepper.
- Pour the cheese mixture over the grated potatoes and stir lightly to combine.
- Dot the top with additional butter and sprinkle with paprika.
