Ingredients

  • 6 medium potatoes
  • 1/3 cup chives
  • 1/4 cup butter
  • 1 teaspoon salt
  • 2 cups Cheddar or Velveeta cheese
  • 1/4 teaspoon pepper
  • 1 pint sour cream

Instructions

  1. Cook potatoes in skins until tender, then chill.
  2. Peel and grate the potatoes into a casserole dish.
  3. In a saucepan over low heat, melt butter and cheese together.
  4. Remove from heat and stir in sour cream, chopped chives, salt, and pepper.
  5. Pour the cheese mixture over the grated potatoes and stir lightly to combine.
  6. Dot the top with additional butter and sprinkle with paprika.
  7. Bake in a preheated oven at 350°F (175°C) for 35 minutes until bubbly and golden.
