Ingredients

  • 6 lb. bottom round roast
  • 6 potatoes, peeled and quartered
  • 1 stalk celery
  • 1 lb. carrots, peeled
  • 1 onion, chopped
  • 2 c. water

Instructions

  1. Place the bottom round roast in a deep baking pan.
  2. Arrange peeled and quartered potatoes around the sides of the pan.
  3. Place peeled carrots all around the top of the potatoes.
  4. Sprinkle chopped onion and garlic over the carrots.
  5. Cover and bake at 350°F for 2 hours.
  6. Uncover the pan and add water.
  7. Bake at 200°F for one more hour.
  8. Allow the roast to cool for 20 minutes.
  9. Slice the roast thinly and serve with the juices or gravy.
