Ingredients

  • 2 lb. cooked boudin
  • seasoned bread crumbs
  • 1 or 2 eggs, beaten slightly

Instructions

  1. Remove the cooked boudin from its casing.
  2. Form the meat into walnut‑sized balls.
  3. Dip each ball in lightly beaten egg, then roll in seasoned bread crumbs.
  4. Heat oil to about 325°F and deep‑fry the balls until lightly browned.
  5. Drain the fried balls on paper towels.
  6. Serve hot with toothpicks.
