Fattigmann, also known as Bowknots, are delicate Norwegian fried cookies with a rich egg yolk flavor, aromatic cardamom, and a light dusting of powdered sugar, perfect for special occasions.

Ingredients

  • 6 egg yolks
  • 1 Tbsp. melted margarine
  • 1 tsp. ground cardamom
  • 1/2 tsp. salt
  • 1/4 c. sugar
  • 1/3 c. cream, whipped
  • 2 c. sifted flour

Instructions

  1. Beat egg yolks until thick and lemon colored.
  2. Add sugar to the egg yolks and mix well.
  3. Stir in melted margarine.
  4. Fold in whipped cream and ground cardamom.
  5. Sift together flour and salt.
  6. Fold the sifted flour mixture into the yolk mixture to form a soft dough.
  7. Chill the dough thoroughly.
  8. Divide the dough in half.
  9. Roll each piece on a lightly floured surface to about 1/8-inch thickness.
  10. Cut each rolled dough into 3 x 3/4-inch strips.
  11. Cut a slit lengthwise in the center of each strip and pull one end through the slit to form a knot.
  12. Deep fry a few at a time in hot fat at 375°F (190°C) for 1 to 1 1/2 minutes or until light golden brown.
  13. Drain on paper towels.
  14. While warm, sift a little confectioners sugar over the cookies.
