Braised Celery Wedges

Ingredients

  • 1 stalk celery
  • 1 chicken bouillon cube
  • 3/4 cup boiling water
  • 1/2 teaspoon oregano leaves
  • 1 tablespoon pimento, sliced

Instructions

  1. Trim stem ends of celery; cut stalk crosswise about 6 inches from the base, reserving leaves for other uses.
  2. Cut the celery lengthwise into 4 to 6 wedges and arrange in a large skillet.
  3. Dissolve the chicken bouillon cube in boiling water and add to the skillet along with oregano leaves.
  4. Bring the mixture to a boil.
  5. Reduce heat, cover, and simmer for 8 minutes or until the celery is crisp-tender.
  6. Remove the celery to a heated platter.
  7. Scatter sliced pimento over the celery and serve.
